What are you doing this Saturday? Would you like to join me for some live music? Or how about we visit with some of our favorite local farmers and producers? I could also get you some unheard of deals at the co-op that day (like $1.99 per pound on organic Honeycrisp apples, $2.99 per package on our entire selection of Plainville Farms deli meats, and 40 percent off all Bluff Country Co-op essential oils), as well as some of our kitchen’s secret recipes. Bring the kiddos, too! There will also be a puppet show and a kid-friendly cooking class! And did I mention all the giveaways? My favorite is Giving Goodness, where one lucky person will win $75 of co-op groceries plus the co-op will donate $75 to Winona’s food shelf in that person’s name.

It’s Bluff Country Co-op’s grand opening this Saturday, December 9, from 8 a.m. to 8 p.m.! We’re pulling out all the stops to welcome in our community and to celebrate all the hard work and cooperation that went into our expansion, an expansion undertaken with local food, community, and health at its center. We hope to see you there!

My Favorite Dessert of All Time — What else would I make
to celebrate our grand opening?

Lemon bars

Total time: 20 minutes active, 25-40 minutes baking
Servings: 16 bars
Ingredients

Crust
• 2 cups
all-purpose
flour
• 3/4 cup
confectioner’s
sugar
• 3/4 cup butter,
cold and cut
into small pieces

Filling
• 4 large eggs
• 1 1/3 cups sugar
• 1/4 cup all-purpose flour
• 1 teaspoon lemon zest, minced
• 3/4 cup fresh lemon juice (3-4 lemons)
• Pinch of salt

Preparation
Preheat the oven to 350ºF. Grease a 9x13 inch baking dish. In a large mixing bowl, whisk the flour and confectioner’s sugar together. Cut in the butter with a pastry cutter or your fingers until the mixture is crumbly. Press the dough into the pan evenly. Bake for 15-17 minutes.

While the crust is baking, whisk the filling ingredients together in a large mixing bowl. Pour the filling onto the hot crust. Place the dish back into the oven and bake for about 15-20 minutes.

Let the bars cool completely before cutting or topping with powdered sugar.
