Summer eatin’
Summer eatin’ was a tasty blast,
Summer eatin’ filled me up fast.
Roasted zucchini, so good with brie,
Ate juicy blueberries, sweet as can be.
Summer munchies drifting away to oh oh the summer spreads!
Feed me more, feed me more,
Did you get to cook out?
Feed me more, feed me more,
Did you have brussels sprouts?
We went to market and bought our fill,
That night we fired up the grill,
We roasted beets, straight from the ground,
And snacked on snap peas, growing all around.
Summer lunches, something’s begun but oh oh those summer spreads!
Feed me more, feed me more,
Was it love at first bite?
Feed me more, feed me more,
Did everything taste alright?
We went strolling at the market,
Then headed to the co-op for a bit,
We ate out near the levee,
The food was as fresh as can be.
Summer breakfasts don’t mean a thing but oh oh the summer spreads!


Probably the Pink Ladies’ Favorite Salad

Adapted slightly from “A Plate With a Pulse” by Elizabeth Abbene

Salad ingredients

• 3 avocados, sliced

• 3 tomatoes, seeded and diced

• 1 cup sprouts

Dressing ingredients

• 2 Tablespoons lemon juice

• 2 Tablespoons garlic, minced

• 1 teaspoon sea salt

Prep

Toss all ingredients in a bowl, leaving a slightly chunky consistency.

Definitely the Greasers Favorite Salad

Salad ingredients

• 3 avocados

• 1 bunch kale, stemmed and finely chopped

• 3 stalks celery

Dressing ingredients

• 2 Tablespoons lemon juice

• 2 Tablespoons garlic, minced

• 1 teaspoon sea salt

Prep

Place kale in a bowl, sprinkle with salt and massage well until kale is slightly wilted. Add lemon and massage again. Blend avocado, olive oil, and celery to cream and pour over salad. Mix well to completely coat the kale leaves.
