The easiest bandwagon you’ll ever jump on

Have you ever wanted to jump on a bandwagon but feared what it would do to your reputation 10 years down the line? Have I got the thing for you!

I promise it won’t make you look as ridiculous as a mustache, a mullet, a selfie, yoga pants or a Justin Bieber hairstyle. And it definitely won’t waste as much of your time as “Duck Dynasty,” “Pokemon,” or grumpy cat. It’s way easier than going gluten-free, sugar-free, or carb-free. And it doesn’t require as much explanation as being vegan or paleo. Are you ready?

Tomorrow for breakfast, mid-morning snack, or lazy dinner, make avocado toast. It’s all the rage and I fully support getting swept up in it. First of all, toast is just about the easiest thing on the planet to make. The other morning I walked into the kitchen to find that my three-year-old had made herself a piece of toast and was buttering it. Easy peasy. Secondly, avocados rank among the best foods in the universe. Potassium out the wazoo, more nutrients than I care to rattle off, and heart-healthy fat make this fruit a powerhouse. Thirdly, this little dish kills it on the time-to-make: flavor ratio. You can make it in about three minutes flat and its flavor will knock your socks off.

 

Avocado Toast

1 slice whole 

wheat toast

1 avocado, 

sliced

A drizzle of 

olive oil and a 

sprinkle of salt 

and pepper

 

1. Arrange the sliced avocado on the toast. You can either leave it like this or gently mash the avocado so it is more like a spread on the toast.

 

2. Lightly, lightly drizzle olive oil over the avocado and sprinkle with salt and pepper.

 

Get Creative! 

This is obviously a bare bones avocado toast recipe. From here, dress it up any which way you choose. For example, add a slice of tomato, a fried egg, and a touch of arugula and you’ve got a cafe-worthy breakfast sandwich. Sprinkle on some chopped walnuts and a few sunflower seeds for added crunch. Top with goat cheese for more creaminess or sprinkle on parmesan cheese and red pepper flakes for a bit of zip.
