Fans of the popular Rubio’s Family Mexican Restaurant in the Winona Mall, and their mobile taco stand that caters to hungry bar patrons on the weekend, will be happy to learn that their owner is planning to open a third establishment in the former Solid Grounds coffee shop on the corner of Sarnia and Washington streets. Castillo Rubio recently purchased the building to bring his family’s home-style Mexican food to those on the go.
“At some point down the road we may turn it into another restaurant for the summer, but right now we are just planning on it being a drive-through,” said Maribell Rubio, Castillo’s daughter.
The $40,000 price tag included the building, surrounding property, and all the restaurant equipment inside. Cuisine choices will be similar to what can be found at the Gilmore Avenue restaurant, but Rubio said the drive-through would most likely have a more limited menu.
An opening date for the drive-through restaurant is yet to be determined.
For those who get their late-night Rubio’s fix downtown, Rubio said the family-owned restaurant will apply for their annual service permit in March to continue operating the after-hours mobile food stand.
